The only way I found to fix this in Windows 7 was to open the Registry Editor by going to start and typing regedit. Before you go any further, its a good idea to click on Computer and go up to File, then export and save a backup of your Registry settings in case something goes wrong.
Once in the registry, Expand HKEY_LOCAL_MACHINE\SOFTWARE\Wow6432Node\EPSON\EPSON Scan. In this folder you will find sub folders beginning with ES and some numbers, such as ES0094. You need to inspect each folder to find entries referring to the scanner device name you wish to delete. Once you locate the scanner name in the folder, you can delete the whole folder. If you have multiple scanner devices you wish to delete repeat this process. Make sure not to delete the folder that contains the current device you are using. After doing this, just close the Registry Editor (no need to save as changes are made immediately). Now when you click on the Epson Scan Icon it should take you directly to the scan utility using your current device. Hope this helps.

I contacted Epson on this. On Mac OSX, I had a DX6050 and replaced with a BX635FWD, both appeared in list when using scan, even though the DX was disconnected.
They said to follow http://kb.epson-europe.com/article.aspx?article=1973&p=7 to remove old scanner.
Well, I wasn't happy with just uninstalling old software (I don't have the discs now), but article gives places to look for files.
I trashed "/Library/Image Capture/TWAIN Data Sources/EPSON CX5900_CX6000_DX6000.ds" file and that fixed it.
